1792 Bourbon has introduced its Cognac Cask Finish, the first cask-finished expression in its permanent portfolio.

The latest release from 1792 transfers Kentucky Straight Bourbon Whiskey from charred American White Oak barrels into hand-selected ex-Cognac casks for its final maturation. These barrels are placed on the top floors of the rickhouses, where rising heat intensifies aging and interaction with the wood. After resting for a minimum of six months in Cognac casks, the bourbon is bottled at 95 proof.

“We’ve experimented with a range of premium cask finishes, but Cognac immediately stood out for how naturally it complements our Small Batch Bourbon,” says Ross Cornelissen, Barton 1792 Master Distiller. “Extended finishing in Cognac casks reveals dessert-like notes and layered complexity, while showcasing the full-bodied character of the Small Batch Bourbon and its signature high-rye recipe.”

The distillery’s journey into barrel finishes began with 1792 Port Cask Finish. This experience set the stage for this expression, which builds on Barton 1792’s tradition, using the same mashbill, fermentation, and distillation process as 1792 Small Batch Bourbon.

“1792 Cognac Cask Finish represents a new flavor chapter in this brand’s story,” says Andrew Duncan, Global Brand Director, 1792 Whiskey. “We’re pleased to offer a whiskey that invites both new and experienced spirits fans to enjoy premium cask-finished bourbon. It’s already becoming a favorite among bourbon connoisseurs.”

1792 Cognac Cask Finish is available now for $37.99.

The end of the line is moving for Heaven’s Door Spirits. The whiskey brand founded by Bob Dylan has announced its plans to open a new distillery in Pleasureville, Kentucky.

Located on over 160 acres of rolling hills astride Six Mile Creek, the property was once owned by Squire Boone, the brother of frontiersman Daniel Boone. Under development since 2017, Heaven’s Door has been producing small batches of bourbon on its custom Vendome still since 2018. The distillery features two separate stillhouses, each in its own western horse barn, a visitor’s center with tasting rooms and lounges overlooking the valley and Six Mile Creek, an eighteenth-century grist mill, two eighteenth-century cabins and a Moravian barn, all of which have been painstakingly restored. Heaven’s Door Distillery plans to open its doors to the public in September 2023.

“This is a momentous occasion for Heaven’s Door,” said Marc Bushala, Co-Founder and CEO of Heaven’s Door Spirits. “We selected this location for its remarkable natural beauty and unique ecosystem that has enabled us to make exceptional bourbon and create an unrivaled visitor experience,” added Bushala. “We are committed to the art of craft whiskey and honor the legacy of the many pioneers who have helped make Kentucky bourbon what it is today. We are thrilled to have Heaven’s Door be part of this storied tradition.”

Ken Pierce was brought on as Master Distiller to lead the project from design through distillation. Pierce began his career with Barton Brands Distillery, initially working as Senior Chemist to Director of Distillation and eventually becoming Master Distiller. Pierce was instrumental in the development of 1792 Small Batch Kentucky Straight Bourbon Whiskey and its limited release expressions.

“I was honored to be chosen as Master Distiller for the Pleasureville project,” added Pierce. “The Heaven’s Door Distillery has been an incredible project, from inception to production of our first barrels. For me, this is a living legacy of my 40 years in the industry and my passion for making great whiskey.”

Heaven’s Door is proud to lead the way in sustainable distilling, utilizing two underground aquifers to access limestone water for its distilling as well as geothermal heating and cooling of the buildings. Through its dedication to sustainable practices, the distillery cultivates its own heirloom grains and recycles protein-rich mash from the fermentation process as feed for cattle on surrounding farms.

The project will help drive economic growth and opportunities in the county by creating more than 50 jobs and bringing tourism to the area. The distillery also plans to work with local farmers to source ingredients for its spirits, further strengthening its ties to the community.

In addition to its Pleasureville distillery, Heaven’s Door has announced it will open a unique brand experience in a former church in Downtown Louisville. It will house a small live music venue, a private event space and a restaurant and bar featuring one of the largest selections of American whiskeys in the country. The Heaven’s Door brand center includes plans to construct a new 15,000 square foot immersive art experience adjacent to the church which will feature a collection of Dylan’s critically acclaimed paintings and metalworks, as well as curated exhibitions of other artists.

Heaven’s Door had previously announced that it intended to open a showcase distillery and brand center in a 160-year-old church in Nashville, which it acquired in 2016. “With our distillery opening in Pleasureville, KY, having our brand experience in Louisville made more sense,” said Bushala. “We will use the Nashville property as the seat of The Heaven’s Door Foundation, the Company’s philanthropic arm which supports charities for the arts.”

Barton 1792 Distillery Releases Four New Thomas S. Barton 1792 Distillery is returning to its Thomas S. Moore brand with the release of its second collection of extended cask-finished bourbons. This release is made up of four different expressions, including a Cognac, Madeira, Sherry and Merlot finished bourbon whiskeys.

To create these whiskeys, Barton 1792’s high rye recipe bourbon was aged for five to six years in new charred oak barrels before filling other casks that previously matured various wines or spirits. These whiskeys are then left to age an additional one to four years. This extended cask-finishing method results in elegant whiskeys, each displaying a distinct flavor profile, reflecting nuances of both the bourbon and the finishing cask.

“This second Thomas S. Moore release really reinforces that the extended aging is quite significant,” Master Distiller Danny Kahn said. “What we are seeing are complex, fuller textures being developed. Savory flavors and aromas are unquestionably enhanced and continue to develop in the secondary cask in ways that are very different from the primary barrel aging. The result is an elevated, premium collection unlike any other.”

The cognac barrels Kahn used generally held cognac for six or more years previously. The merlot barrels came from premium wineries from the Napa and Sanoma areas. The sherry barrels were all oloroso sherry. A variety of different types of madeira barrels were used.

Kahn, who personally tasted every single barrel that went into this release at least once, created a few sub-blends for each expression. From there, the sub-blends were sorted based on categories of flavors from which the final blends were chosen. The four resulting expressions are a beautiful demonstration of the art of blending.

Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Madeira Casks was finished for approximately two to four years and is 96.5 proof. Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Merlot Casks was finished for approximately two to four years and is 93.3 proof. Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Sherry Casks was finished for approximately one to four years and is 98.7 proof. Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Cognac Casks was finished for approximately two to four years and is 93.4 proof. Additional cask-finished releases will be unveiled every year in the fall.

This line of bourbons intends to honor Thomas S. Moore, a bourbon pioneer who built the Distillery known today as Barton 1792 Distillery. The tall, sophisticated bottles feature imagery that pays homage to the legacy of Moore. Each label displays the image of a racehorse standing tall, honoring one of Moore’s earliest whiskey brands, Belle of Nelson, named for the thoroughbred who won the Kentucky Oaks in 1878.

Each Thomas S. Moore expression is available now for $69.99.

Barton 1792 Distillery has just finished construction of Warehouse 33, the first warehouse built on its site since 1963. The first barrels of whiskey were rolled into this warehouse on Feb. 25, 2021.

This warehouse, which was constructed on the hillside behind the distillery was built as part of a $25 million warehouse investment at the Bardstown facility, and will be soon joined by two more warehouses. Warehouses 34 and 35 are under construction now and are expected to be complete later this summer and fall.

These warehouses are made of traditional wood floors and wood storage ricks with metal siding. Warehouse 33 will hold 33,500 barrels, and Warehouse 34 and 35 will hold 58,800 barrels each. For reference, the existing warehouses on the Distillery’s property hold 19,600 barrels each. This investment will increase barrel storage capacity by 25 percent.

Amid this expansion, Barton 1792 continues to offer complimentary tours and tastings for visitors to explore decades of bourbon making history and sample products, but with appropriate safety measures in accordance with CDC guidelines and government recommendations.

Barton 1792 Distillery is open 9 a.m.-4:30 p.m. Monday through Saturday. Registration for the Barton Tradition Tour can be made at www.1792Distillery.com. All tours and tastings remain complimentary.

Barton 1792 Distillery introduces its first ultra-premium brand, Thomas S. Moore Kentucky Straight Bourbon Whiskeys.

The range has been finished in a variety of select casks from around the world. The first three expressions released last December included a Port Finish, a Chardonnay Finish, and a Cabernet Sauvignon Finish. Additional cask-finished releases will be unveiled every year in the fall.

In 1889, Thomas S. Moore built the distillery known today as Barton 1792 Distillery. He was an early pioneer in Bardstown, recognized today as the “Bourbon Capital of the World.” Prior to Prohibition, Moore established a whiskey empire, growing his operation into a powerhouse distillery, filling hundreds of barrels of whiskey a day. Business boomed until The 18th Amendment forced the Distillery to cease production in 1920. Now, this namesake line of bourbons intends to honor Moore.

Barton 1792 will define a new category of “extended cask finished” bourbon whiskeys with this new collection. Their signature high rye recipe bourbon is aged for many years in new charred oak barrels before filling other casks that previously matured various wines or spirits from around the world, ranging from Cognac to Cabernet to Port and more. In these casks, the bourbon is aged an additional one to three years. This extended cask-finishing method results in a distinct flavor profile, reflecting nuances of both the bourbon and the finishing cask.

Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Port Casks is described as having a taste that is soft and sweet, with subtle hints of vanilla and baking spices. This whiskey is 98.9 proof.

Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Chardonnay Casks has a rich taste, with notes of citrus, tropical fruit, and buttery oak. This whiskey is 97.9 proof.

Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Cabernet Sauvignon Casks has a bold taste, with notes of dark fruit, caramel, and vanilla. This whiskey is 95.3 proof.

The tall bottles feature imagery that pays homage to the legacy of Moore. Each label displays the image of a racehorse, honoring one of Moore’s earliest whiskey brands, Belle of Nelson, named for the thoroughbred who won 1878’s Kentucky Oaks.

Each of Barton 1792 Distillery’s Thomas S. Moore expressions is $69.99.

Barton 1792 Distillery has unveiled its latest limited edition release, 1792 Aged Twelve Years.

Using the same rye recipe as its flagship 1792 Small Batch Bourbon, the Aged Twelve Years expression is 96.6 proof.

“The first thing that hits the palate is a subtle but rich sweetness,” says Barton 1792 Master Distiller Danny Kahn. “It is full, slightly creamy, with a hint of pleasant spice that settles on the tongue. At the end, there is a touch of oaky smokiness that rounds out the aromas. The subtle smokiness of the oak married to the slightly spicy rye flavors and the complex aromas are a nod to what one should expect from a well-matured bourbon. Each time I take it in, I find more and more beautiful interactions!”

Priced at $49.99, the 1792 Aged Twelve Years joins other previous limited edition expressions such as High Rye, Sweet Wheat, Single Barrel, Port Finish, Full Proof and Bottled in Bond Bourbons. One batch of the Aged Twelve Years Bourbon will be released each summer.
